Oatmeal and peanut butter cookies

About the recipe


  • 1 cup oat flour

  • 1/2 cup brown sugar or brown sugar (or whatever you use)

  • 1/2 cup peanut butter

  • 1/2 cup hot water

  • vanilla essence to taste

  • 1 tablespoon baking powder

  • 1/2 teaspoon apple cider vinegar

  • Optional: 1/3 cup chocolate chips minimum 70% cocoa



Preheated oven to 180 degrees.

Mix the liquid ingredients first (sugar + water + vanilla + peanut butter) and then add the dry ingredients, stirring. You will be left with a liquid bin mixture. Let it cool for 10 minutes in the refrigerator.

Once it has cooled, remove the mixture and add the chocolate chips. Stir a little, and begin to put the mixture on the oven tray, with a large spoonful. Leave space between one cookie and another because they will grow.

Bake for 12 minutes, then turn off the oven and let it sit inside for 12 more minutes.

Once they cool they are ready to eat!
