Carrot Cake blondie

About the recipe


-1/4 cup coconut oil

-1/2 cup allulose or cane or coconut sugar

-2 eggs

-1/2 cup water

-In this house we LOVE cinnamon, so lots of it!!

-1 teaspoon vanilla essence

-1 grated carrot

-2 cup ground oats or oat flour

-COMBO: 1 tablespoon baking powder + apple cider vinegar


Preheat oven to 180 degrees.

First add all the wet ingredients (eggs, carrot, water, vanilla, allulose or sugar, coconut oil) and stir.

Then add the oat flour and stir.

Once we have all the ingredients, we add our baking powder + apple cider vinegar combo, and stir with enveloping movements.

We move to a mold of approximately 20x20cm

Optional: put chocolate chips on top (they can also be walnuts, pumpkin seeds, almonds)

We put it in the oven and bake for 25 minutes, then turn it off and leave it in the oven for 15 more minutes.
